I did exactly that in the canvas version I built from the offsets that
Nick Schade has published in his homepage.
I have not tried thickening Gorilla glue, but think it is a bad idea.
Gorilla, contrary to epoxy, requires clamping pressure. If you put a
thinckening agent, that will absorb the clamping pressure and let the
glue foam to the sides. The glue would not penetrate the wood fibers for
lack of pressure.
I covered my boat with 10oz canvas. Then I shrinked it by soaking it with water
and letting it dry on the sun. After that I applied aircraft dope, and then
exterior house paint.
Exterior house paint does not stick very well to aircraft dope, and I get
cracks and paint peel offs. But the aircraft dope does not get a single
crack, it does not peel of, and is extremely flexible and waterproof.
The gallon of aircraft dope is expensive about $40, and it really stinks while you
apply it. It will also make you dizy.
Now I think that the traditional 1/3 exterior house paint + 2/3 linseed oil plus
some chalk on the first coat is the very best solution for covering canvas.
It takes longer to dry out, but easy to apply and non toxic.
