Stefano could you please explain to me how it can work in a way other than
that which I describe?

If you consider the boat to be a giant weathervane the weighted end of the
boat will turn into the wind. Adjusting the weight distribution
allows you to customize the balance point with regard to the current wind
and profile of the hull.

The above water profile of the hull, relative to the wind, plays a big part
in how the boat gets blown around by the wind but still adjusting the weight
in the boat can counter the effect of the different profiles of the hull,
relative to the wind.
