The skins I'm aware of are
heat shrinkable nylon - 9(?), 14, and 21 oz. - durable but stretches when
wet.
heat shrinkable (barely) polyester, doesn't stretch as well as nylon so
there are likely to be puckers around tight curves.
dacron - not as durable, one acquaintance used it once for a skin, with
paint as the coating, but nearly sank when he paddled through new ice.
canvas - not as durable as polyester/nylon but natural
hemp - haven't seen a post from the person who was trying this.
hypallon coated awning material - welded seams instead of sewn. the perfect
fabric in one posters mind.

You forgot to ask about coatings ;-)
