I've always used square knots. I tie the first lash, working the square knot in tight by pulling on each end altgernately until cinched tight. Then I tie the cross lshing the same way, clipping the ends about 1' long.
This was the way I was taught by an experienced builder, and has held up on three different wood framed baidarkas. This is similar to the way Dyson describes in his book.
