5/8" for gunwales ought to be fine on a Greenland kayak. Kayaks of this
sort typically have very tall gunwales (especially when compared to Alaskan
kayaks), so they don't flex much even when cut thinner. Of all the
Greenland kayaks I've seen in museums, none had gunwales thicker than 3/4",
and most were 1/2-5/8". A couple of my replicas have 1/2" gunwales-- they
are adequately strong; the only problem may be drilling the tiny
rib-mortises without splitting them.
The gunwale heights I saw were from 4" (amidships) in a boat of 6-1/4"
depth-to-sheer, to 2" in a boat of 6-5/8" d.s. The respective thicknesses
of their gunwales are 5/8" and 3/4". (Both kayaks are West Greenlandic,
from circas 1837, and 1900 respectively.)
