My favorite is Tung Oil. It creates a nice finish which is water resistant
enough, feels good to touch, and is easy to repair when (notice I say when, not
if) you ding the paddle. Just sand off and/or steam out the damage, blend it
with the surrounding area and apply more Tung oil.
I seem to lightly sand and re-finish about once a month to keep the paddle
looking like fine furniture.
