George,
I have had no problems with leaks on my polyester skinned, water-based
polyurethane sealed kayak. I finished sealing it in October or November
of last year and have been paddling it regularly since then, including
launching and landing at rocky barnacle covered beaches.
I didn't use Dyson's polyester though. I used some 9 oz. stuff that I
found at Tacoma Tent and Awning. It has a tighter weave than Dyson's
stuff, this may be the difference. The weave is so tight it doesn't
unravel easily. I didn't even use a hot knife to seal it, just the
polyurethane.
The polyurethane that I used was Fletco's Water-based outdoor Varathane.
It took about 7 thin coats applied as closed to the minimum dry time as
possible.
