Mike,
After the gunwales are assembled, it's a lot easier to adjust the curve by
scoring than it is to plane a curved surface. I tried it on my second boat,
and it worked great. Some friends had given me a pair of clear, edge-grain
3"X 16'planks, and I couldn't just throw them away because that would have
their feelings, so I decided to see if I could make it work, knowing that
they might not match exactly. Interestingly, I checked them for stiffness
before I started construction, and they were an almost perfect match, but
when they were assembled with the deck beams, the structure wasn't straight.
It took about 5 minutes to correct the problem by scoring, and produced the
same results as disassembling and reassembling the deck structure over and
over again so I could use a plane.
'Course, maybe I'm just not a very good planer. Anyway, it's traditional.
