Thanks for the compliment. I find the shorter wooden handled knives to
be the easiest to use. You are right about the distance to the crook. I
try to get the working part of the blade as close as possible to the
handle. It also helps to have the blade exiting from close to the bottom
of the handle so it's on the work as soon as it exits the handle.

 The longer knife took a while to get used to but works well with
practice. With its wider blade, I find I need to bevel the underside of
the cutting edge a little in order to take deep cuts (add some rocker
across the width of the blade). A little like a round bottomed spoke
shave compared to a flat bottom.

I find that with a lot of crooked knives, the crook is too far from
the handle for good control.
