The difference is quite strong. Am I the only one to have this
reaction? My explanation is that the air cushion breaks my direct
connection to the boat and I no longer feel that I can make the subtle
balancing moves with my body.

On the other hand, I put in a few hundred miles in a stable old
single-rigged Klepper double using a doubled thermarest mattress as a
seat. Very soft and very comfortable. But of course I was also never
concerned about subtle balancing moves in that boat.
