So, I should just relax? What I am doing with the deck beams, stern and bow blocks is making sure that they are all symmetrical about the centerline. I used the lines of the gunwales, as bent by the spreaders, on my Greenland boat, and I ended up a less than symmetical boat.
I realize that forcing the gunwales into symmetric alignment will put all the joints in tension, but I believe (hope) that the wood will conform overtime. Maybe I should put the entire boat in a sauna to steam all the wood into perfect alignment ;-)

Hi, Hyok.
I built a baidarka back in '97, which had a wicked twist in it, and for
other reasons, I dismantled it. I saved the stringers, which all had
the twist in them, and re-used them in a reincarnation. The new frame
had some twist, but not as much. It is noticeable (a little less than
10 degrees), but the boat moves along just fine, in my opinion. Good
