I have done just that. Here is the George Dyson 5.28 in plastic and
aluminum. An issue is the combing, which I used doubled up plastic
gutter border from a big box store. Works well.

Attached are a couple pics.

Just launched this last weekend. The boat performed great and has tons
of room, although a big person might want to enlarge the combing a bit.
If I remember right it is 27 inches long.

You can order plans and materials (with the exception of HDPE) from
George at (360)734-9226. I am also building a 5.28 with the kit George
provides, and am finding it quite a bit easier to assemble, although I'm
not sure how it can be made into a folder.

I've sent you a more detailed email, but I thought I'd
touch base with you on the forum also. The
multi-chine Baidarka design is ready, but I want
 to build it before putting it in the manual.
 However, It's actually a narrow, low volume design,
and may not be suitable for you.

I'd recommend you buy a set of plans for George
Dyson's excellent 5.28m multi-chine single, and
build it with aluminum stringers and HDPE
cross sections as a folder. His all
aluminum construction is rather elaborate,
but it could easily be simplified especially
at the bow and stern for folder use.

It had aluminum stringers and ply cross sections and
 was much simplified at the bow and stern. in fact,
I omitted the bifid bow altogether but retained
 the stern. The gunwales were set one inch higher
than on the plans, and the deckridge was also one
inch higher for a two inch increase in height. This
 made for much more room inside, good for touring,
 but still retained much of the original lines. There
 should be plenty of room for you in this
configuration, though it could be stretched
 several inches in length also.

Aleut stern layout that could easily be adapted to
the Dyson multi-chine. ( 3 per side)

If you build a Dyson design single folder, I'll
be glad to help you work out the dimensions and
details. I see no need for you to use a converted
double.
