If you are going to make a new skin yourself, the old one could have been
used as a pattern for the new one.

Often a boat "restoration" is building another one using the old one as a
pattern, and being able to salvage a few of the original parts. If the wood
frame parts are not broken or rotten, it would save some time to use the old
parts. that is IF the Folbot is a double that you want to own. Otherwise
there are newer designs that are lighter and easier to build than a Folbot.
I do not know if there is any "collector" value in an old Folbot, that is
the only other reason people restor old wood boats, they have historic or
intrisic value besides their design.
