I've made both...but so far I like the Greenland boat for the following reasons:
1. Faster to build. The simple framework is easier to cover.
2. The flat stern deck makes layback rolls easier.
3. Easier to enter the boat. The baidark is a tricky balancing act, and putting the paddle behind the cockpit (per Brinck's suggestion in his book) doesn't seem to quite do the trick for me.
If I do any touring, I'll definitely use the baidarks, for its higher volume.
