Kellan,

I used water-based polyurethane on a boat I finished last month and am quite happy with the results though I cannot yet speak about durability. The brand I used was Rust-oleum's Varathane Diamond Spar Urethane in satin. (about $40/gal.) Ten coats gave a nice finish. Clean-up is easy and you can recoat every 2-3 hours.
