Baidarkas are not dissimilar from many commercial boats in this regard.
My QCC 700 comes to mind with its 10" rear deck height and seat placed
toward the back of the cockpit (before I moved mine) making useful
laybacks rather unlikely/uncomfortable.
Rolls with more upright finishes (and some outfitting) should work well.
The sweep roll taught in "The Kayak Roll" video should be effective as
you end upright, chin tucked and looking down the paddle much like Jim
describes - without the timing/power required with a C to C.
I taught myself to roll in the QCC largely from that video. My other
favorites, "EJ's Rolling and Bracing" and Jay Babina's "1st Roll" both
teach with layback and wouldn't be as baidarka friendly, though I found
that even a moderate arch back can be enough to help and allow some
variation.
Then there's that roll where you slide all the way into the hull with
just arms extending...
