Hi George, I hope this goes through.

Wicker seats, Fine Woodworking Magazine has had a couple of articles
on re-caning seats over they years, might be worth a look see. (I'd
check the on-line index at tautonpress.com or tauntonpress I forget
which.) But if you've already re-caned a couple of chairs you might
be advanced beyond the articles.

I'm guessing that the cane might stretch when it it gets wet, but you
might already have that covered.
It'll be beautiful though to be sure.

Another angle might be every builder's nautical favorite--White Oak.
The Foxfire book of backwoods traditional crafts has a couple of
chapters on splitting white oak into basket staves for weaving.
Stiffer & stronger than wicker. Makes a fine basket and might be
worth considering for use in a kayak.

Have you considered 'stretchers' cross pieces that will keep your
weight in the seat from pulling your kayak ribs inward?
