The two part polyurethane that I've seen on a couple of boats looks nice.
I especially like the translucent effect it had when the sun was shining
through the boat - admittedly these were nylon boats.

We took a "defunct" golf cart, the kind you attach the bag to and then
pull it, added a strap to it and use that to get our canoe and beater
kayak down to the bay. It's rather ugly but it works. We then just
leave the cart while we are out for a paddle. I think we have a second
cart built from a threaded steel rod, a couple of high wheel lawnmower
wheels a board and a strap. The "cart" gets attached to one end of
the boat and you pull the other end to walk it along. Neither of these
carts is ever put in a vehicle as we can walk to the water from both
houses(my parents houses, and my fathers carts). From my house I drive
to the water and at 35 pounds carrying the boat the short distance
to the water is always easier than doing anything with a cart.
